Elderberry Kombucha
✨ From the Orchard
Fermentation meets the fruit of the forest in our Elderberry Kombucha, a tart, fizzy drink we call The Sparkling Immune Brew. At Dee’s Nutz and Berries in Brodhead, WI, we believe gut health and seasonal flavor should go hand in hand. Elderberries bring vibrant purple color and deep flavor to kombucha’s tangy base, creating a beautiful second-ferment beverage that’s rich in antioxidants and live cultures.
Elderberries have long been used in teas, tinctures, and wellness syrups. But when paired with the probiotic punch of kombucha, they create something truly modern and crave-worthy. Our farm opens in 2028, and we can’t wait for you to sip, swirl, and experience the elderberry harvest in every possible form—from preserves to sips like this.

Elderberry Kombucha Recipe
🍽️ Elderberry Kombucha Ingredients
- 1 quart finished, unflavored kombucha (from 1st ferment)
- 1/4 cup elderberry juice (fresh or frozen and thawed)
- 1 tbsp lemon juice (optional, for brightness)
- 1 tsp raw honey or maple syrup (for fizz-boosting sugar)
- Swing-top bottles or jars for bottling
🥣 Elderberry Kombucha Instructions
- Add the elderberry juice, lemon juice (if using), and sweetener to clean swing-top bottles or jars.
- Pour the finished kombucha over the juice mixture, leaving about 1 inch of headspace.
- Seal tightly and let sit at room temperature for 2–4 days for second fermentation.
- “Burp” the bottles daily to release pressure and prevent overflow.
- Once bubbly and slightly tart, refrigerate immediately.
- Serve chilled over ice or in a wine glass for a classy herbal sipper.
🍁 From the Orchard Tip
- 🍷 Try pairing with a splash of seltzer and fresh rosemary for a kombucha mocktail
- 🌡️ Ferment in a warm, dark place (around 70–75°F) for best results
- 🫙 Always sterilize bottles and lids to avoid contamination
- 🧊 Freeze elderberry juice in cubes to flavor future batches anytime
- 🧪 Add a slice of fresh ginger or turmeric root during fermentation for extra kick
- 🍯 Don’t over-sweeten—kombucha feeds off sugar, but too much can slow fizz
