Savory Juneberry Gastrique
π· Savory Juneberry Gastrique: Tart, Herbed & Elegant
This Juneberry Gastrique is a sweet-savory syrup infused with herbs and tang β perfect for drizzling over roasted vegetables, meats, and sharp cheeses. It’s made by reducing juneberries with vinegar, aromatics, and just enough sugar to balance the fruitβs natural tartness. The result? A farm-to-fork glaze that turns even simple ingredients into something gourmet.
Fun fact: Juneberries are rich in iron, calcium, and antioxidants like anthocyanins. They contain twice the fiber of blueberries and a subtle almond undertone β making them perfect for elevated preserves and savory condiments.
At Deeβs Nutz and Berries, weβre growing Amelanchier alnifolia for both fresh eating and value-added goods. Once our farm opens in 2028, youβll find handcrafted syrups like this one featured in tastings and seasonal pairings.
