Ingredients for Pink Currant Tart
- 1½ cups fresh or frozen seaberries
- 2 cups water
- 1 tablespoon fresh ginger, sliced
- 1 cinnamon stick (optional)
- Zest of 1 orange
- 1 tablespoon lemon juice
- ½ cup raw honey (or maple syrup for vegan version)
Instructions for Seaberry Vitality Syrup
In a saucepan, combine seaberries, water, ginger, orange zest, and cinnamon. Bring to a simmer and cook for 20–25 minutes, until reduced and fragrant.
Strain the mixture through a fine mesh sieve, pressing gently to extract juice. Stir in lemon juice and honey while the liquid is warm.
Pour into a sterilized glass jar or bottle. Store in the refrigerator for up to 3 weeks.
